Generally I prefer lower tension strings for a practice instrument (less hand-fatigue). Otherwise, they do sound better than the original strings. Maybe my cordoba mini shipped with "A strings" that were just tuned down to E. If so, they were mislabeled (they were supposed to be E strings).
Tying the knots for strings beads is a bit unusual. Classical guitars of course generally use a tie block. I'm not sure why cordoba designed this instrument with bridge pins, though for a small travel instrument maybe it makes sense. You may have a hard time finding much info about adding ball ends to standard strings, because almost no one designs a nylon string guitar using ball end strings.
As for the bead knots: the OEM strings used a basic "overhand knot" for all the strings, except, the high E string used a "double overhand knot". Also, for the bass strings, the overhand knot loop went through bead. For the trebles, the knot is just a stopper. the My initial thought was: an overhand would just snap off, but they seem to hold fine.
I did find some people use either a "figure 8 knot" or "ashley stopper knot" which are only slightly more difficult to tie. :-)
First of all you'll have to make a double knot on the first string in order for the ball-end to not slip out. Secondly these strings stretch a whole lot! More than regular strings do. So you'll have to patiently raise the pitch since it will keep on dropping for a while until it stabilizes and gets where you want it. Also I've found that going back and forth from one string to the other is helpful rather than trying to tune one string at a time. You will be turning those tuning keys for a while, at least if you have a small guitar like mine, and yet it is so soo sooo worth it!
